Sticky Oven-Baked BBQ Ribs

Dry-rubbed baby back ribs bake low and slow wrapped in foil until tender, then get glazed with barbecue sauce under the broiler.

Why it's here: Ribs are a top game-day search every fall weekend, and oven methods win once grilling weather turns.

Ingredients

  • 2 racks baby back ribs (about 5 lb)
  • Rub: 3 tbsp brown sugar, 1 tbsp smoked paprika, 2 tsp salt, 1 tsp each garlic powder, onion powder and black pepper
  • 1 cup barbecue sauce
  • 1 tbsp apple cider vinegar

Steps

  1. Heat the oven to 275°F. Pull the thin membrane off the back of the ribs with a paper towel.
  2. Rub the ribs all over with the spice mix. Wrap each rack tightly in foil and set on a sheet pan.
  3. Bake 2 1/2 hours, until the meat pulls back from the bones.
  4. Unwrap and pour off the juices. Heat the broiler. Stir the vinegar into the sauce and brush it on thickly.
  5. Broil 3 to 5 minutes, watching closely, until sticky and charred in spots. Rest 5 minutes, then slice.

TipYou can finish the ribs on a hot grill instead of the broiler.
