Ingredients

  • 1 1/2 lb sirloin steak, cut in 1-inch cubes and patted dry
  • 1 tsp salt and 1/2 tsp pepper
  • 1 tbsp high-heat oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp chopped parsley

Steps

  1. Season the steak.
  2. Heat the oil in a cast-iron skillet over high heat until it shimmers.
  3. Add the steak in one layer (in batches if needed). Sear 2 minutes without moving, then toss and cook 1 to 2 minutes more for medium-rare.
  4. Lower the heat, add the butter and garlic, and toss 30 seconds until fragrant.
  5. Sprinkle with parsley and serve right away.

TipDon't crowd the pan. Crowded steak steams and turns gray.
