Garlic Butter Chicken and Potatoes

Crispy-edged baby potatoes and juicy chicken thighs roasted on one pan, then tossed in garlic butter. It's also easy to pack into lunches for the week.

Ingredients

  • 1 1/2 lb baby potatoes, halved
  • 1 1/2 lb boneless chicken thighs, cut in large pieces
  • 2 tbsp olive oil
  • 1 1/2 tsp salt and 1/2 tsp pepper
  • 1 tsp smoked paprika
  • 3 tbsp butter, melted
  • 4 cloves garlic, minced
  • 2 tbsp chopped parsley
  • 1 lemon

Steps

  1. Heat the oven to 425°F. Toss the potatoes with half the oil and half the seasoning on a sheet pan. Roast 15 minutes.
  2. Toss the chicken with the remaining oil, salt, pepper and paprika.
  3. Push the potatoes to the sides, add the chicken, and roast 18 to 20 minutes more, until the chicken reaches 175°F inside and the potatoes are golden.
  4. Stir the garlic into the melted butter. Pour it over the pan and toss.
  5. Finish with parsley and a squeeze of lemon.

TipFor meal prep, divide into 4 containers with a green vegetable. Keeps 4 days.
