Ingredients

  • 8 thick slices banana bread, a day or two old
  • 3 eggs
  • 2/3 cup milk
  • 1 tsp cinnamon and 1 tsp vanilla
  • Butter for the pan
  • Maple syrup, sliced bananas and toasted pecans to serve

Steps

  1. Whisk the eggs, milk, cinnamon and vanilla in a shallow dish.
  2. Melt a little butter in a skillet over medium-low.
  3. Dip each slice quickly, about 5 seconds per side. Banana bread is soft and soaks fast.
  4. Cook 2 to 3 minutes per side until golden and set.
  5. Serve with syrup, bananas and pecans.

TipLower heat than regular French toast keeps the sugary bread from burning.
