  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp each nutmeg and cloves)
  • 1 cup (200 g) packed brown sugar
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (120 ml) neutral oil
  • 2 eggs
  • 1 can (15 oz) pumpkin purée

  3. In a second bowl, whisk both sugars, oil and eggs until smooth, then whisk in the pumpkin and milk.
  4. Fold the dry ingredients into the wet until no dry streaks remain. Don't overmix.
  5. Pour into the pan and bake 55 to 65 minutes, until a toothpick in the center comes out clean.
  6. Cool 15 minutes in the pan, then lift out and cool completely before slicing.
