Ingredients

  • 1 lb ground beef
  • 3 tbsp butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/4 cup flour
  • 4 cups beef broth
  • 1 1/2 lb potatoes, cubed
  • 1 1/2 cups milk
  • 2 cups shredded cheddar
  • 1 tbsp ketchup and 1 tsp mustard
  • Salt and pepper; diced pickles to serve

Steps

  1. Brown the beef in a large pot. Drain and set aside.
  2. Melt the butter in the pot and cook the onion, carrots and celery 7 minutes. Stir in the flour for 1 minute.
  3. Whisk in the broth, add the potatoes, and simmer until tender, 15 minutes.
  4. Return the beef. Stir in the milk, cheddar, ketchup and mustard over low heat until the cheese melts.
  5. Season and serve with diced pickles on top.

TipTopping it with toasted bun cubes makes it feel even more like a burger.
